In March of 2010 I found out I was intolerant to gluten and also had sugar sensitivity. I was very lucky that I had a friend who had gluten intolerance and was a pro at gluten free living. She gave me great advice along with sharing gluten free recipes for things I love and thought I could never have again, like macaroni and cheese and low-glycemic brownies. Her recipes gave me hope that gluten free food did not have to taste terrible and that life didn't have to be as dreary as I felt it would be at the time. Those first years were really a struggle and I had to learn how to carefully check all ingredients, learn about items where gluten secretly hides (like soy sauce!), and advocate for myself at restaurants and at get-togethers with friends. Then just when I thought I was getting really good with all of that, about 6 years later I was experiencing fatigue  almost every time I went out to eat. After another elimination diet I discovered that I'm also intolerant to soy. With this third dietary restriction some of the frustration from those first years returned, but at least now I knew right away what to do to keep myself feeling well. Despite the years of struggle and frustration, I have come to appreciate the discovery of what had been making me sick for a lifetime. That knowledge and learning how to navigate a new diet has not only helped my body to heal naturally, but it has inspired me to make gluten free treats delicious for everyone.
